PROTEIN BOOSTED TOMATO SAUCE

A great tomato sauce can be put on just about everything. From pizza and pasta to potatoes. Do you want to cut out carbs? Try spiralizing zucchini or spaghetti squash. How about breakfast? Say yes to tomato sauce and eggs. Seriously, anything goes when you have a great base. This is a simple way to keep your nutrition high even when eating comfort food. You can keep it in the fridge for up to 5 days, or put some in the freezer to have it on hand when you need something quick, easy, and nutritious. (plus kids love it!!)

Ingredients

2 TBS Olive Oil
1 White Onion diced
2 Celery Stalks diced
2 Carrot diced
3 Garlic cloves
1 can crushed or diced tomatoes  
1 tsp tomato paste
Salt
Black pepper
6 TBS Leap's All Seasons Blend Seasoning

Instructions

Warm the olive oil in a large saucepan and add the onions closely followed by the garlic. Once the onions are translucent add the celery, carrots, and half of the LEAP seasoning. Cook about 2-3 minutes or until you see it coming together. Add the remaining seasoning, tomato paste and canned tomatoes cooking over low heat, stirring every 20 minutes for about an hour or until the sauce is thick and smooth. If you're feeling adventurous and like your sauce extra smooth. Pour the sauce into a blender, you only need a few seconds to achieve an extra smooth texture. Once done place back in the large saucepan until ready to serve.
